Tradition passed down
We're a South Texas ranching family. What started as a neighborhood counter now feeds thousands of families every week.
From the ranch to the counter
We pick every carcass the way you pick cattle: good fat, good marbling, good handling. We cut by hand every day, marinate with house recipes, and nothing reaches the counter unless we'd serve it at our own table.
That stubbornness took us from one store to five, and it keeps our motto alive: keep the fire burning.

2016
We opened our first butcher shop in Mission with one counter and a lot of faith.
2019
McColl arrives, and with it the grill that never goes out.
2022
Trenton and Tres Lagos: the Valley knows our house cut.
2026
New location in Rio Grande City and nationwide shipping.
